AHI POKE
(Makes 3 servings)
8 ounces fresh ahi fillet, diced 3/4 inch
1/2 cup Maui onion or red onion, chopped
1/2 cup ogo (seaweed)
2 stalks green onion, sliced
1 tsp. Sesame oil
2 tsp. Soy sauce
3/4 tsp. Hawaiian rock salt (sea salt)
Mix all ingredients together and refrigerate overnight.
Serve on a bed of greens and
sprinkle with toasted sesame seeds.
Time: Just 15 minutes to prepare

LOMI LOMI SEARED
SALMON POKE
(Makes 2 servings)
4 ounces salmon, diced 3/4 inch
1/4 cup Maui onion or red onion, chopped
1/4 ogo (seaweed)
1 tsp. Low salt soy sauce
1/2 tsp. Sesame oil
1 stalk green onion, sliced
2 tbls. Olive oil
1/2 medium Kula tomato or beefsteak tomato, seeded and diced
1 avocado, halved and pitted
2 lime wedge
Sprinkling of nori furikake (optional-dried seaweed)
In a bowl, mix the first six ingredients. Place the oil in a pan on high heat and
just at the smoking point, sear the fish mixture for a minute, the fish should be raw in
the center. Add this to the tomatoes and salt to taste. Serve on half an
avocado and garnish with lime wedge and radish sprouts. Master Chef Glenn Chu likes
to top this salad with nori furikake.
Time: Just 15 minutes to prepare
Note: Lomi is the Hawaiian word for massage. Lomi Lomi salmon is a typical lu'au
dish that is made by rubbing salt into the salmon. This draws the water from the
meat and in the process cures the salmon. Glenn says, "A wonderful dish for
your next lu'au."
