Maebelle's Pasta Salad

10 oz. spiral pasta noodles, cooked
2 cups small cooked shrimp
1/4 cup Veg. oil
1 large head broccoli, thinly sliced
1 large carrot, shredded
2 handfuls of raw bean sprouts

Dressing:
1/3 cup soy sauce
1/3 cup white wine vinegar
3 tbsp. sugar
1/2 tsp. salt
1/4 tsp. pepper

In a large bowl, combine dressing ingredients, add pasta, shrimp, and oil. Marinate for 2 hours or overnight. Toss vegetables with pasta mixture just before serving.

Pumpkin Carrot Bread

3 cups all purpose flour 
1 (15oz.) can pure pumpkin
2 tbsp. pumpkin pie spice 
4 lg. eggs
2 tsp. baking soda 
1 cup veg. oil

1 1/2 tsp salt 1/2 cup water
2 1/2 cups sugar
1 cup shredded carrots

Grease and flour 2 (9x5 inch) loaf pans (You can use the smaller loaf pans)
In a large bowl, combine flour, pumpkin pie spice, baking soda and salt
In a lg. mixing bowl, combine sugar, pumpkin, eggs, oil and water, beat until just blended.  Add pumpkin mixture to flour mixture, stir until moistened.
Fold in carrots. Spoon batter into loaf pans
Bake in preheated 350-deg. oven 60 to 65 minutes or until wooden pick comes out clean. Cool in pans on wire racks 10 min., then remove to wire racks to 
cool completely.

PORK TOFU
1/2  pound pork, sliced thin
1/3 c. shoyu (soy sauce)
2 Tbs. sugar
1/4 thumb size, grated ginger
1 med. round onion, sliced thin
3 green onions chopped
1 block tofu, cubed

Brown pork in 1 tbs. oil, add shoyu, sugar and ginger. Cook until the sauce
bubbles.
Add all the onions, and cook over low heat, until round onions are transparent, gently fold in tofu, cook until tofu absorbs sauce. If you like more sauce you can double the shoyu and sugar.
So ono, (delicious over rice)
TOFU SALAD
1 block firm tofu, drained and cubed
1 can salmon (16 oz.)
1 lg. tomato diced
1 sm. onion, chopped
1 pkg. bean sprouts
1 bunch watercress, cut in 1 inch pieces
2 chopped green onions

Combine all ingredients well, except tofu. Add tofu and fold in gently.
In a sauce pan, combine 1/2 cup Canola oil and 3 cloves of minced garlic, bring to boil. Remove from heat and add 3/4 cup soy sauce, mix well. Pour dressing over salad, serve immediately. Enjoy.

Auntie's BANANANANA Bread!
This cake needs no frosting and can be served alone or with fresh fruit.

Cream 1/2 lb butter with 1-1/2 cup sugar
When creamy, add 4 eggs (1 at a time) 1 tsp. vanilla and mix well.

Add 3 cups of mashed bananas, alternately with 2-1/2 cups flour, sifted with 2 teas. baking soda and 1 tsp. salt.

Add 3/4 to 1 cup of finely chopped walnuts (optional)

Bake @ 350 degrees for 1 hour or until cake rises and pulls away from the pan.  Wrapped properly, these cakes freeze very well.  I made 3 load fans with the above recipe.  
(Good for gifts, unless your family eats them all first.)

BOILED PEANUTS
You will see people munching boiled peanuts at every Hawaiian function.
If you grew up eating them -- 
you love 'em!

10 LB. RAW PEANUTS
1 HANDFUL 5-STAR ANISE
1 CUP HAWAIIAN SALT

SOAK PEANUTS AND 5-STAR ANISE OVERNIGHT IN A LARGE POT (PUT WEIGHT ON PEANUTS TO KEEP THEM SOAKING IN WATER).

POUR OUT HALF OF WATER AND BRING PEANUTS TO BOIL. REPLACE LID AND COOK APPROX.3 TO 3 1/2 HOURS AT LOW HEAT TO PREVENT FROM BOILING OVER.

CHECK PEANUTS HALFWAY THROUGH COOKING AND ADJUST SALT AS DESIRED.

PUMPKIN CRUNCH

1 LARGE CAN PUMPKIN
 (not the pie mix -- just plain pumpkin)
1 CAN evaporated milk
3 EGGS (beaten)
3/4 CUP SUGAR
1 BOX Yellow Cake Mix 
(use the mix not the box)
1 CUP chopped nuts - Macadamia nuts
 (of course)
1 CUP melted butter
Whipped Cream

Mix pumpkin, milk, eggs and sugar in a bowl.  Pour into a 13 x 9 inch oblong pan.  Sprinkle the DRY cake mix and nuts over the pumpkin mixture.  Spoon the melted butter on top.   
Bake @ 350 degrees for 1 hour.

LET IT COOL COMPLETELY 
THEN TURN IT ONTO A SERVING PLATE.

Serve with whipped cream.

SHORTBREAD
PUMPKIN/CUSTARD PIE

CRUST

2 1/2 cup Flour
1/2 cup Sugar
1 cup Margarine or Butter

Mix ingredients and pat onto sides and bottom of 13" pan.

BAKE CRUST 5 minutes @350
Remove from oven & cool.

FILLING

4 eggs beaten
1 Lg. Can Pumpkin
1 tsp. Salt
1 tsp. Cinnamon
1 tsp. Ginger
1 cup Brown Sugar
2 cans Evaporated Milk

Mix filling in a large bowl.  Pour into crust.  Bake 20 minutes @ 450.  Lower temp to 350 and bake for 55 additional minutes.

(Aloha Joe note:  I tasted this pie during our Christmas show -- IT'S GREAT!! I ate the entire pie.  Don't tell Helen.)
